Raspberry and White Chocolate Muffins

Ingredients 150g raspberries (fresh or frozen) 100g white chocolate 100g unsalted butter 300g plain flour 1tbsp baking powder 100g caster sugar 2 large eggs 200ml skim milk Method Preheat oven to 200°C. Line muffin tray with paper cases (or baking paper) Sieve baking powder and flour into large mixing bowl. Add sugar. Melt butter. Whisk eggs and skim milk together in separate bowl. Add to flour mixture and stir. Break white chocolate into small chunks and stir into mixture. Add approximately half of raspberries and stir into mixture. Spoon mixture into muffin tin spaces. Berry Daiquiris

Ingredients 200 g frozen berries Juice of one small lime Juice of one small lemon Salt/sugar (for dipping glass rims) 50g of white sugar (adjust to taste) 2 cups ice 100ml dark rum (or vodka or gin) Method Combine berries, sugar and ice in blender. Strawberry Jam

Ingredients 3kg strawberries (fresh or frozen) Juice from one small lemon 3kg white sugar Method Cut tops of strawberries and halve. In a large saucepan combine sugar and strawberries. Leave to stand for 1 hour. Add lemon juice and cook on medium heat, stirring constantly. Once strawberries are very soft and the mixture coats the back of a spoon jam is ready. Spread evenly between jars, allow time to cool and then seal with lids. Approximately five 350g jars. How to sterilise jars Wash jars and lids in warm soapy water. Place jars in hot boiling water for five minutes or place in dishwasher on hottest cycle or place jars in a hot oven(220°C) for ten minutes. Allow time to cool before filling....
